Chocolate Chip Almond Cookies

  • ½ cup almonds
  • 7 tbsp of melted butter
  • ½ cup brown sugar
  • cup granulated sugar
  • ¼ tsp salt
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ tsp almond extract
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 1 ½ cup flour
  • ½ cup chocolate chips


  1. Preheat oven to 350
  2. Toast the almonds in a dry skillet - toast for 2 to 3 minutes. Place in a nut grinder once cooled to grind.
  3. In a large bowl mix together butter and sugars until fluffy. Add in the egg, vanilla extract, and almond extract and mix until combined.

  4. In a medium bowl sift together the flour, salt, baking powder, and baking soda. Slowly add the dry ingredients to the wet until combined.

  5. Fold in the chocolate chips and almonds.
  6. Place about 2 tbsp of dough per cookie onto the baking sheet (leave some room between as the cookies will spread a little). Cook for 10-12 minutes, or until the edges turn golden brown.
